Instructions
- Brew the espresso and let it cool completely. Mix with coffee liqueur if using.
- Separate the egg yolks from the whites into two bowls.
- Beat the egg yolks with sugar until pale, thick, and creamy.
- Add the mascarpone cheese to the egg yolk mixture and mix until smooth and well combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the mascarpone mixture until light and airy.
- Quickly dip each ladyfinger into the cooled espresso — just 1–2 seconds per side, do not soak.
- Arrange a layer of dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone cream evenly over the ladyfingers.
- Add another layer of dipped ladyfingers on top.
- Spread the remaining mascarpone cream over the second layer.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust generously with dark cocoa powder and garnish with chocolate shavings.
