Ingredients

For the crust : 

  • 200 g digestive biscuits (crushed)
  • 100 g melted butter

For the cheesecake filling : 

  • 400 g cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the topping : 

  • 1 cup fresh strawberries (sliced)
  • 1/4 cup strawberry sauce

Optional :

  • Whipped cream
  • Mint leaves for decoration

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Mix the crushed biscuits with melted butter until combined.
  3. Press the mixture firmly into the bottom of a springform pan to form the crust.

  5. Add the eggs one at a time, mixing well after each.
  6. Add vanilla extract and sour cream, then mix until creamy.
  7. Pour the filling over the prepared crust.
  8. Bake for 25–30 minutes until the center is slightly set.
  9. Let the cheesecake cool completely, then refrigerate for 2 hours.
  10. Top with fresh strawberries and strawberry sauce before serving.
