Ingredients

  • 300g large shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and black pepper (to taste)
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Pat the shrimp dry with a paper towel and season with salt and black pepper.
  2. Heat vegetable oil in a wok or large pan over high heat until very hot.
  3. Add the shrimp and cook for 1–2 minutes on each side until pink and golden. Remove and set aside.
  4. In the same wok, add the minced garlic and grated ginger and stir for 30 seconds.
  5. Add the carrots and broccoli and stir fry for 2 minutes.
  6. Add the bell peppers and snap peas and stir fry for another 2 minutes.
  7. In a small bowl, mix soy sauce, oyster sauce, and sesame oil together.
  8. Pour the sauce over the vegetables and toss well to coat evenly.
