  • 3 large eggs, separated
  • 4 tablespoons sugar

Instructions

  1. In a small saucepan over medium heat, combine the cherries, sugar, and amaretto. Cook for 5 minutes until the cherries soften and release their juices.
  2. Add the cornstarch mixture and stir until the sauce thickens. Remove from heat and let cool completely.
  3. In a bowl, beat the egg yolks with sugar until pale and creamy. Add the mascarpone and mix until smooth.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the mascarpone mixture until light and airy.
